Samuel Lino and Antoine Griezmann were on goal when Los Rojiblancos moved in a point of Laliga leaders Real Madrid, who later played Espanyol on Saturday.
Atletico broke the impasse in the 26th minute when Lino Mallorca -goalkeeper Dominik Greif defeated with a low ride.
Simeone's side had not succeeded in winning their last two league games, and it was only deep in the second half of the stop time that they were the points.
They also did this in a sublime way, while Griezmann Greif lobed from a distance to ensure that Athleti returned to roads for their blockbuster with Madrid in Santiago Bernabeu next weekend.
